The idea of infusing green tea into savory dishes might initially surprise you, but there's a reason it has been a part of traditional Japanese cuisine for decades.
Today we're sharing our take on a vegan pea soup... this one is packed with Matcha Ninja , adding a hint of delicate flavour and a vibrant pop of colour.
Matcha Pea Soup
Prep Time: 5 Minutes
Cook Time: 10 Minutes
Serves: 4
Ingredients

1 small white onion finely chopped

1 tablespoon vegan butter

2 cloves garlic, finely chopped

600g frozen peas
-
700ml hot vegetable stock, hot

½ - 1 tsp matcha powder

Salt and pepper to taste
Directions

In a large pot, sauté the onion in butter for 4-5 minutes.

Add the garlic and cook for another 2 minutes.

Add the frozen peas and vegetable stock to the pot. Bring to a boil and cook for about 5 minutes.

Blend until smooth with an immersion blender or in a high-speed blender. Add the matcha powder at this point and season with salt and pepper.

If you are not serving the soup immediately and want to keep its beautiful bright green color, pour it into a large pitcher and immerse it in a bowl of ice water almost to the rim to cool it quickly. Store it in the refrigerator and reheat it before serving.
