
These cookies are vegan-friendly and have a delicious base made with spelt flour and almond butter.
As if that wasn't enough, they are filled with a creamy matcha buttercream.

Matcha Chocolate Sandwich Cookies Recipe

Servings: 10-12 cookies
Ingredients
For the cookies
180g smooth almond butter
80g maple syrup
100g white spelt flour
20g cocoa powder
80ml plant milk or water
Large pinch of salt
For the filling
120g vegan butter/margarine
2 tsp matcha ninja powder
200g icing sugar

Directions
- Preheat your oven to 180C (350F).
- In a bowl, mix all the cookie ingredients together.
- Roll the dough out between two pieces of parchment paper until it's roughly ¼ inch (about 6mm) thick.
- Use a mini cookie cutter to cut out 20-24 cookies, re-rolling the dough as needed.
- Arrange the cookies on a parchment paper lined baking sheet.
- Bake the cookies in the preheated oven for 10 minutes. Gently flip each cookie and bake for another 5 minutes. Allow them to cool on the baking sheet.
- Mix the filling ingredients and refrigerate for a couple of hours. This can be done even before making the cookies.
- Once the cookies have cooled, fill them with about 1.5 teaspoons of filling.
- Store in the fridge for up to a week.
