
You’ll love these super easy to make baked matcha donuts, topped with a sweet, shiny matcha glaze.
They take 10 minutes to prepare and are ready in just 8.
They are absolutely perfect with a matcha latte on the side, for a double dose of matcha (which, of course, is totally our style).

Ingredients

60g mild olive oil

80g sugar

1 large egg

1 tsp baking powder

1 tsp matcha powder

170g white spelt flour

125ml coconut or almond milk*
For the glaze
-
80g icing sugar
-
½ tsp matcha powder
-
1 tbsp coconut or almond milk

Sprinkles and desiccated coconut for garnish

Directions

Preheat oven to 180°C (350°F).

Liberally spray your donut pan with oil spray. We used a @wiltoncakes donut pan which makes 6 at a time.

In a large bowl, whisk together the olive oil, sugar and egg. Sift in the matcha powder, baking powder and spelt flour, then pour in the milk and stir everything together.

Spoon the batter (you can also transfer it to a large jug) into the prepared pan. We baked 6, removed them from the pan, gave it a quick clean, then baked two more.

Bake for 8 minutes. Cool in the pan for 5 minutes and they should pop out easily. You can use a toothpick to detach them from the pan if needed.

Cool completely on a wire rack before glazing.

In a shallow bowl, whisk together the glaze ingredients.

Dip donuts one at a time into the glaze with the bottom side (the one that was in the pan) facing down, lift, twist and place on a tray or plate for the glaze to set for about 10 minutes. Sprinkle with desiccated coconut and colourful sprinkles before the glaze sets.
